There are many signs that indicate that a plant based proteins diet is changing from being a trend to generate a food revolution, a green revolution.
In this way, plant proteins foods and beverages are undergoing a strong growth worldwide with an annual growth rate of 57%, in the period from 2015 to 2019, according to a study made by Innova Market Insights.
This change in consumption is due to health reasons such as food intolerances to milk protein, gluten, but also owing to other factors such as proximity, temporality and sustainability, … consumer motivations to look for alternative products and thus increasingly, on the shelves we find different options of food suitable for vegetarians and vegans.
Even in the dairy sector, a wide range of products with plant based proteins has been developed, different from dairy: soy, oat, almond, coconut, … from yogurts to vegetable drinks and desserts.
At Cosmos, we work on the development of masking agents to cover the off-notes of these proteins, and also on the flavouring of the different bases creating specific flavours for this category of Dairy products.
